- 4 boneless, skinless chicken breasts (1.5 lbs)
- 3 cloves fresh garlic, minced
- 2 cups cottage cheese (low-fat or full-fat)
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil
- 2 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season chicken breasts with salt, pepper, dried oregano, and drizzle with olive oil. Place them on a baking sheet.
- Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- While the chicken bakes, mix cottage cheese and lemon juice in a bowl.
- Once baked, slice the chicken and layer it over the cottage cheese.
- Serve garnished with fresh herbs or olives if desired.
