Ingredients

  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup bell peppers, sliced (mixed colors)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted
  • 2 tbsp fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and chop all vegetables: dice cucumbers, halve tomatoes, slice bell peppers and red onion.
  2. In a large bowl, mix chopped veggies with Kalamata olives and crumbled feta cheese.
  3. In a separate bowl or jar, whisk together olive oil and lemon juice; season with salt and pepper.
  4. Drizzle dressing over salad mixture and toss gently to combine.
  5. Allow salad to rest for about 10 minutes before serving to enhance flavors.
  6. Serve chilled or at room temperature; garnish with additional parsley if desired.
