- 1 cup cucumbers, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup bell peppers, sliced (mixed colors)
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted
- 2 tbsp fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
Instructions
- Wash and chop all vegetables: dice cucumbers, halve tomatoes, slice bell peppers and red onion.
- In a large bowl, mix chopped veggies with Kalamata olives and crumbled feta cheese.
- In a separate bowl or jar, whisk together olive oil and lemon juice; season with salt and pepper.
- Drizzle dressing over salad mixture and toss gently to combine.
- Allow salad to rest for about 10 minutes before serving to enhance flavors.
- Serve chilled or at room temperature; garnish with additional parsley if desired.
