- 1 lb lean ground beef
- 3 cups romaine lettuce, chopped
- 1 pint cherry tomatoes, halved
- 1 cup corn (fresh or frozen)
- 1 can (15 oz) black beans, rinsed
- 1 ripe avocado, diced
- 2 cups tortilla chips
- ½ cup sour cream (or Greek yogurt)
- 2 tbsp lime juice
- ¼ cup fresh cilantro, chopped
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
- Add taco seasoning and half a cup of water; simmer for about five minutes until thickened.
- While the meat cooks, chop the romaine lettuce and halve the cherry tomatoes.
- In a large bowl, combine the lettuce, tomatoes, corn, black beans, diced avocado, and half of the cooked beef mixture. Toss gently.
- Drizzle lime juice over the salad mixture and sprinkle with chopped cilantro; toss again.
- Serve individual portions topped with the remaining beef mixture, crushed tortilla chips, and dollops of sour cream.
