Ingredients

  • 1 lb lean ground beef
  • 3 cups romaine lettuce, chopped
  • 1 pint cherry tomatoes, halved
  • 1 cup corn (fresh or frozen)
  • 1 can (15 oz) black beans, rinsed
  • 1 ripe avocado, diced
  • 2 cups tortilla chips
  • ½ cup sour cream (or Greek yogurt)
  • 2 tbsp lime juice
  • ¼ cup fresh cilantro, chopped

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  2. Add taco seasoning and half a cup of water; simmer for about five minutes until thickened.
  3. While the meat cooks, chop the romaine lettuce and halve the cherry tomatoes.
  4. In a large bowl, combine the lettuce, tomatoes, corn, black beans, diced avocado, and half of the cooked beef mixture. Toss gently.
  5. Drizzle lime juice over the salad mixture and sprinkle with chopped cilantro; toss again.
  6. Serve individual portions topped with the remaining beef mixture, crushed tortilla chips, and dollops of sour cream.
