  • 1 1/2 cups all-purpose flour
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick Earth Balance® butter (cut into small pieces)
  • 1/3 cup boiling water
  • 4 tsp organic sugar
  • 1 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the sliced peaches, sugars, lemon juice, corn starch, cinnamon, and nutmeg. Gently stir until well coated.
  3. Pour the peach mixture into an ungreased 9 x 13 baking dish and bake for about 10 minutes.
  4. In another bowl, whisk together flour, sugars, baking powder, and salt. Cut in the butter using a pastry blender until it resembles coarse crumbs.
  5. Stir in boiling water until just combined.
  6. Spoon the topping over the baked peaches evenly.
  7. Mix remaining sugar and cinnamon in a small bowl and sprinkle over the top.
  8. Bake for an additional 35 minutes or until golden brown.
