Ingredients
- 8 large fresh peaches (peeled, pitted, and sliced)
- 1/3 cup organic brown sugar
- 1/3 cup organic sugar
- 1 tsp lemon juice
- 2 tsp corn starch
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 1/2 cups all-purpose flour
- 1/3 cup organic brown sugar
- 1/3 cup organic sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 stick Earth Balance® butter (cut into small pieces)
- 1/3 cup boiling water
- 4 tsp organic sugar
- 1 1/2 tsp cinnamon
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the sliced peaches, sugars, lemon juice, corn starch, cinnamon, and nutmeg. Gently stir until well coated.
- Pour the peach mixture into an ungreased 9 x 13 baking dish and bake for about 10 minutes.
- In another bowl, whisk together flour, sugars, baking powder, and salt. Cut in the butter using a pastry blender until it resembles coarse crumbs.
- Stir in boiling water until just combined.
- Spoon the topping over the baked peaches evenly.
- Mix remaining sugar and cinnamon in a small bowl and sprinkle over the top.
- Bake for an additional 35 minutes or until golden brown.
