  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick Earth Balance® butter, cut into small pieces
  • 1/3 cup boiling water
  • 4 tsp organic sugar
  • 1 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel, pit, and slice the peaches, then combine them in a bowl with sugars, lemon juice, corn starch, cinnamon, and nutmeg.
  3. Pour the peach mixture into an ungreased 9 x 13 baking dish and bake for 10 minutes.
  4. In another bowl, whisk together flour, sugars, baking powder, and salt. Blend in Earth Balance® until crumbly.
  5. Stir in boiling water to form a thick batter.
  6. Spoon the batter over the baked peach layer and sprinkle with cinnamon-sugar mixture.
  7. Bake for an additional 35 minutes or until golden brown.
