- 8 large fresh peaches
- 1/3 cup organic brown sugar
- 1/3 cup organic sugar
- 1 tsp lemon juice
- 2 tsp corn starch
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 1/2 cups all-purpose flour
- 1/3 cup organic brown sugar
- 1/3 cup organic sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 stick Earth Balance® butter, cut into small pieces
- 1/3 cup boiling water
- 4 tsp organic sugar
- 1 1/2 tsp cinnamon
Instructions
- Preheat your oven to 425°F (220°C).
- Peel, pit, and slice the peaches, then combine them in a bowl with sugars, lemon juice, corn starch, cinnamon, and nutmeg.
- Pour the peach mixture into an ungreased 9 x 13 baking dish and bake for 10 minutes.
- In another bowl, whisk together flour, sugars, baking powder, and salt. Blend in Earth Balance® until crumbly.
- Stir in boiling water to form a thick batter.
- Spoon the batter over the baked peach layer and sprinkle with cinnamon-sugar mixture.
- Bake for an additional 35 minutes or until golden brown.
