- 7 ripe peaches (skinned, pitted and cut into 1/2" slices)
- ½ cup all-purpose flour
- ¼ cup brown sugar
- ¼ cup white sugar
- 4 tbsp butter (chilled and cut into small pieces)
- 1 tsp ground cinnamon
- ¼ cup apple juice
- 1 tbsp lemon juice (fresh)
- 1 tbsp all-purpose flour
- ½ tbsp ground cinnamon
- ⅛ tsp kosher salt
- non-stick cooking spray (or butter)
Instructions
- Preheat your oven to 375°F and grease an 8×8 baking pan.
- In a mixing bowl, combine flour, brown sugar, white sugar, salt, and cinnamon. Cut in chilled butter until crumbly.
- In another bowl, mix sliced peaches with apple juice, lemon juice, flour, sugar, and cinnamon.
- Pour peach mixture into the prepared pan and top evenly with the crisp topping.
- Bake for about 40 minutes until golden brown on top.
- Allow it to cool on a rack before serving.
