Instructions
- In a large bowl, whisk together flour, sugar, baking powder, salt until combined.
- In another bowl, mix milk, egg, vanilla extract until smooth.
- Combine wet and dry ingredients gently; fold in diced peaches.
- Heat vegetable oil in a heavy-bottomed pot to 350°F (175°C).
- Drop spoonfuls of batter into hot oil; fry until golden brown (about 2–3 minutes per side).
- Drain on paper towels.
- For the glaze, mix powdered sugar with milk and vanilla until smooth; drizzle over warm fritters.
