Ingredients
- 6 medium cloves garlic
- 1.5 lb skirt steak (trimmed and cut into 4 pieces)
- Kosher salt
- Freshly ground black pepper
- 2 tablespoons canola oil (or vegetable oil)
- 2 oz unsalted butter
- 1 tablespoon fresh flat-leaf parsley (chopped)
Instructions
- Peel and smash the garlic cloves, then mince them after sprinkling lightly with salt.
- Pat the steak dry and season both sides generously with kosher salt and freshly ground black pepper.
- Heat the oil in a heavy-duty skillet over medium-high heat until shimmering hot, then add the steak and brown well for about 2 to 3 minutes per side for medium rare. Remove from skillet and let rest.
- In a small skillet over low heat, melt the unsalted butter. Add minced garlic and cook until lightly golden, about 4 minutes.
- Slice the rested steak if desired and transfer to plates. Drizzle generous amounts of garlic butter over each portion, sprinkle with chopped parsley, and serve immediately.
