- 1 lb skinless, boneless chicken breasts
- 2 medium zucchini, sliced
- 1.5 cups cooked corn kernels
- 5 cloves garlic, minced
- 2 tablespoons olive oil
- 4 tablespoons butter (divided)
- Fresh lime juice
- Chopped cilantro for garnish
Instructions
- Prepare by slicing the zucchini and mincing the garlic.
- In a skillet over medium-high heat, add olive oil. Season chicken with smoked paprika, chili powder, salt, and pepper; sear until golden brown (about 6-8 minutes).
- Push chicken to one side of the pan; add butter to the empty space. Once melted, sauté garlic until fragrant.
- Stir in zucchini and corn; cook until zucchini is tender.
- Drizzle lime juice over everything, add remaining butter, toss well, and garnish with cilantro before serving.
