- 2 cups apple cider
- 6 tbsp unsalted butter
- ½ cup brown sugar

- ¼ cup nonfat plain Greek yogurt
- 2 cups whole wheat flour
- 3 tsp cinnamon
- ½ tsp nutmeg
- 2 tsp ginger
- ¼ tsp cloves
- ¼ tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2/3 cup whole wheat flour (for crumble topping)
- ¼ cup melted butter (for crumble topping)
- ½ tsp cinnamon (for crumble topping)
- 4 tbsp brown sugar (for crumble topping)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin pan.
- In a small saucepan, boil apple cider until reduced by half; then whisk in melted butter.
- In a large bowl, combine brown sugar, eggs, yogurt, and one cup of the reduced cider mixture.
- In another bowl, mix whole wheat flour with spices, baking powder, baking soda, and salt.
- Fold the dry ingredients into the wet mixture until just combined; fill muffin tins two-thirds full.
- Bake for approximately 18-20 minutes or until golden brown.
