- 1 lb ground lamb (or all beef)
- 1 large onion
- 6 garlic cloves
- 2 tbsp dried oregano
- 1 tbsp dried thyme
- 1 tsp dried rosemary
- 2 tsp dried marjoram
- 2 tsp cumin
- 3 tsp salt
- 2 tsp black pepper
- Pita bread
- Fresh lettuce
- Sliced tomatoes
- Sliced red onions
- Crumbled feta cheese
- Tzatziki sauce
Instructions
- Puree onion and garlic in a food processor until smooth.
- In a mixing bowl or stand mixer, combine the meats with pureed onion, garlic, and spices until it reaches a paste-like texture.
- Optionally refrigerate the mixture for enhanced flavor (2 hours to 24 hours).
- Preheat oven to 325°F and prepare a baking tray lined with foil.
- Shape the meat mixture into a log and wrap it tightly in foil with a skewer inserted through the center.
- Bake for about 1.5 hours until the internal temperature reaches 160°F; flip halfway if not using a loaf pan.
- Let rest before slicing thinly; sauté slices in oil for added crispiness.
- Assemble gyros in warm pita with tzatziki sauce and your choice of toppings.
