- 6 cups chopped lettuce (iceberg or romaine)
- 1 8-ounce Greek marinated chicken breast
- 2 cups Mediterranean tomato salad or sliced tomatoes
- 1 cup sliced Persian cucumber
- 1/4 cup kalamata olives
- 1/4 cup feta cheese
- 1/4 cup extra virgin olive oil
- 1/4 cup red apple vinegar
- 1 clove garlic, peeled and minced
- 2 teaspoons dried oregano
- 1 teaspoon sugar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- In a large serving bowl, add the chopped lettuce.
- Layer the sliced chicken breast on top, followed by the tomato salad (or sliced tomatoes), cucumber slices, kalamata olives, and feta cheese chunks.
- To make the dressing, combine olive oil, vinegar, minced garlic, oregano, sugar, salt, and pepper in a small canning jar. Shake well until blended.
- Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.
