Ingredients
- 1 1/2 lbs boneless skinless chicken cutlets
- 3 oz garlic and herb veggie marinade
- 1 lb asparagus
- 1 medium zucchini
- 1 medium yellow squash
- 1 red bell pepper
- Olive oil cooking spray
Instructions
- Marinate the chicken with salt and 2 tablespoons of the marinade; let sit for at least 1 hour.
- Toss vegetables in remaining marinade until coated.
- Preheat the grill to medium-high heat.
- Grill vegetables on a tray for about 8 minutes until browned; set aside.
- Grill chicken for 4-5 minutes per side until cooked through (internal temperature of 165°F).
- Serve chicken alongside grilled veggies.
