Ingredients
- 2 medium zucchini (sliced)
- 2 bell peppers (cut into pieces)
- 1 large onion (sliced)
- 1 lb mushrooms
- 4 Tbsp olive oil
- 4 Tbsp fresh lemon juice
- 3 garlic cloves
- 1 tsp ground coriander
- 1/4 tsp ground cumin
- 1 tsp sweet paprika
- 1/8 tsp chili powder
- 1/2 Tbsp salt
- 1/2 tsp ground black pepper
- 1/2 bunch fresh parsley
- 1/2 bunch fresh cilantro
Instructions
- Make the marinade by blending olive oil, lemon juice, garlic, and spices in a food processor until smooth. Add chopped parsley and cilantro.
- Toss sliced vegetables in the marinade until coated evenly. Refrigerate for at least 4 hours to let flavors infuse.
- Preheat grill. Thread marinated vegetables onto soaked wooden skewers.
- Grill over medium-low heat for about 15 minutes, turning occasionally until tender.
