- 1 pound ground beef
- 2 medium zucchinis, diced
- 1 large sweet potato, peeled and cubed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté for 2-3 minutes until fragrant.
- Add ground beef to the skillet. Cook for 5-7 minutes until browned. Drain excess grease if necessary.
- Stir in sweet potatoes along with smoked paprika, oregano, salt, and black pepper. Cover and cook for about 10 minutes until tender.
- Add diced zucchini; cook uncovered for an additional 5 minutes until slightly softened but still crunchy.
- Remove from heat and garnish with fresh parsley before serving warm.
