Instructions

- In a large bowl, whisk together the egg, honey, Greek yogurt, milk, melted oil, and vanilla until smooth.
- Gradually mix the dry ingredients into the wet ingredients until just combined—avoid overmixing.
- Gently fold in peeled and diced peaches.
- Divide the batter among muffin cups, filling each about three-quarters full.
- Bake for 18–22 minutes or until a toothpick comes out clean from the center.
- Cool in the pan for five minutes before transferring to a wire rack.
