  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups whole wheat flour or spelt flour

Instructions

  1. Preheat your oven to 350°F. Line a 9″ x 5″ loaf pan with parchment paper or lightly grease it.
  2. In a large bowl, mash the bananas until smooth. Add the grated zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt. Whisk until well combined.
  3. Gradually add the whole wheat flour to the wet mixture and stir gently with a spatula until just combined—avoid overmixing.
  4. Pour the batter into the prepared loaf pan and smooth out the top. Bake for 50-60 minutes or until a toothpick comes out clean when inserted in the center.
  5. Allow the bread to cool in the pan for about 10 minutes before transferring it to a cooling rack. Once cooled completely, slice into approximately 12 pieces and enjoy!
