Instructions
- Preheat oven to 350°F (175°C). Prepare a loaf pan with parchment paper and cooking spray.
- In a mixing bowl, whisk together egg, applesauce, honey (or maple syrup), cinnamon, baking soda, baking powder, and salt until combined.
- Stir in shredded zucchini until evenly mixed.
- Gently fold in flour until just combined; avoid overmixing.
- Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool for 10 minutes in the pan before transferring to a rack to cool completely.
