  • 3 cups fresh peaches, peeled and diced
  • 2 large eggs
  • ¾ cup granulated sugar
  • ½ cup sour cream (or plain Greek yogurt)
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. Cream together softened butter and sugar in a mixing bowl until light and fluffy. Add flour and salt; mix until crumbly.
  3. Press the mixture into the bottom of the prepared pan to form the crust. Bake for 15 minutes.
  4. While cooling, combine diced peaches with sugar, lemon juice, and cornstarch in another bowl. Toss to coat evenly.
  5. Spread the peach mixture over the baked crust.
  6. Whisk together eggs, sugar, sour cream (or yogurt), flour, and vanilla extract until smooth; pour over peaches.
  7. Bake for an additional 35–40 minutes until lightly golden brown on top.
  8. Cool completely before cutting into squares.
