Ingredients
- 1 cup unsalted butter
- 2 cups all-purpose flour
- 3 cups fresh peaches, peeled and diced
- 2 large eggs
- ¾ cup granulated sugar
- ½ cup sour cream (or plain Greek yogurt)
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- ¼ teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- Cream together softened butter and sugar in a mixing bowl until light and fluffy. Add flour and salt; mix until crumbly.
- Press the mixture into the bottom of the prepared pan to form the crust. Bake for 15 minutes.
- While cooling, combine diced peaches with sugar, lemon juice, and cornstarch in another bowl. Toss to coat evenly.
- Spread the peach mixture over the baked crust.
- Whisk together eggs, sugar, sour cream (or yogurt), flour, and vanilla extract until smooth; pour over peaches.
- Bake for an additional 35–40 minutes until lightly golden brown on top.
- Cool completely before cutting into squares.
