Instructions
- Season chicken with olive oil, garlic powder, salt, and black pepper. Sear in a hot skillet until golden brown on both sides and cooked through.
- In the same skillet, melt butter over medium heat. Sauté minced garlic until fragrant. Add chicken broth, Dijon mustard, wholegrain mustard, and stir in cream and parsley; simmer until thickened.
- Boil peeled potatoes until soft, drain, then mash with butter and milk/cream until smooth; season to taste.
- Sauté trimmed carrots in melted butter until tender; glaze with honey or maple syrup and season.
- Serve chicken topped with sauce alongside mashed potatoes and glazed carrots.
