- 1/2 cup cold salted butter, cubed
- 1/2 cup white sugar
- 1/3 cup honey
- 2 egg yolks
- 1 tsp vanilla extract
- 1 1/2 cups bread flour
- 1/2 cup yellow cornmeal
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- Additional granulated sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the cold cubed butter and white sugar using an electric mixer until light and fluffy.
- Add honey and egg yolks, mixing until fully incorporated.
- In another bowl, whisk together bread flour, yellow cornmeal, baking soda, baking powder, and salt. Gradually mix into the wet ingredients on low speed until just combined.
- Scoop tablespoons of dough, roll into balls, and coat in granulated sugar before placing on the prepared baking sheet.
- Bake for about 15 minutes or until edges are lightly golden. Cool briefly on the baking sheet before transferring to a wire rack.
