Ingredients
- 1 salmon fillet (5–6 oz)
- 1 tbsp honey
- 1/2 tbsp soy sauce or tamari
- 1 tsp olive oil
- 1 garlic clove, minced
- 1 cup green beans, trimmed
- 1 cup baby potatoes, halved
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Toss baby potatoes with olive oil, salt, and pepper. Arrange cut-side down on a baking sheet and roast for 20-25 minutes until crispy.
- In a non-stick frying pan over medium heat, sauté minced garlic and green beans with a bit of olive oil for about 5-6 minutes until just tender.
- In another pan, heat olive oil over medium-high heat. Cook salmon skin-side down for 4-5 minutes until browned. Flip carefully, brush with honey-soy mixture, and cook for an additional 2-3 minutes.
- Plate by placing salmon in the center, arranging green beans on one side, and crispy potatoes on the other. Garnish with parsley if desired.
