Ingredients
- 1/3 cup water
- 3/4 cup granulated sugar
- 3/4 cup light corn syrup
- 3 large egg whites (room temperature)
- 1/2 teaspoon cream of tartar
- 1 teaspoon vanilla extract
Instructions
- In a medium heavy-bottom saucepan, combine water, granulated sugar, and light corn syrup over medium-high heat until bubbling. Do not stir.
- In a stand mixer, whip egg whites and cream of tartar until soft peaks form (about 3-4 minutes).
- Once the sugar mixture reaches 240°F, slowly pour it into the whipped egg whites while mixing on medium speed.
- Increase the speed to medium-high and continue whisking for about 7-8 minutes until thickened; add vanilla extract.
- Allow the fluff to cool completely before using or storing in an airtight container at room temperature for up to two weeks.
