- 8 large eggs
- 1/2 cup heavy cream
- 6 strips turkey bacon (chopped)
- 2 medium potatoes (diced)
- 1/4 cup fresh chives (chopped)
- 1/2 cup cheddar cheese (grated)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F.
- In a skillet over medium heat, cook the chopped turkey bacon until crispy; remove and set aside.
- In the same skillet, add diced potatoes and cook until golden brown.
- In a mixing bowl, whisk together eggs, heavy cream, salt, and pepper.
- Pour egg mixture over cooked potatoes in the skillet; sprinkle turkey bacon and cheese on top.
- Cook on medium heat for about 3 minutes until edges begin to set.
- Transfer skillet to the preheated oven and bake for 15-20 minutes until set in the center.
- Garnish with fresh chives before serving warm.
