- 8 oz fettuccine or penne pasta
- 1 cup Boursin cheese (garlic and herb flavor)
- 2 tbsp extra virgin olive oil
- 2 cups fresh spinach
- 1 cup halved cherry tomatoes
- 1 cup low-sodium chicken broth
- Freshly cracked black pepper to taste
Instructions
- Cook pasta in boiling salted water until al dente (about 8 minutes). Drain, reserving half a cup of pasta water.
- In a skillet over medium heat, add olive oil and sauté cherry tomatoes and spinach until spinach wilts (about 3 minutes).
- Lower heat and stir in chicken broth and Boursin cheese until well combined.
- Add drained pasta to the skillet, tossing gently to coat in sauce. Adjust consistency with reserved pasta water if necessary.
- Season with black pepper to taste before serving.
