- 1 cup unsalted roasted pistachios
- 2 cups plain full-fat Greek yogurt
- 1 cup full-fat coconut milk
- 1/4 cup honey or maple syrup
- 1 tsp pure vanilla extract
Instructions
- Blend the Greek yogurt, coconut milk, honey (or maple syrup), and vanilla extract in a blender until smooth.
- Add half of the pistachios to the blender and pulse until coarsely chopped.
- Pour the mixture into a freezer-safe container and freeze for about 2 hours.
- Stir the mixture to break up any ice crystals, then return it to the freezer for an additional 4 hours or until fully set.
- Serve scoops in bowls or cones topped with remaining chopped pistachios.
