- 3–4 medium ripe bananas (mashed)
- 1 ¾ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup granulated sugar
- ½ cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 tsp vanilla extract
- For the Frosting:
- 8 oz full-fat cream cheese (softened)
- ½ cup unsalted butter (softened)
- 3 cups powdered sugar
- 2 tbsp milk or plant-based milk (as needed)
Instructions
- Preheat your oven to 350°F (175°C) and grease two round baking pans.
- In a large bowl, mash the ripe bananas until smooth.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Mix sugar and vegetable oil into the mashed bananas. Beat in eggs one at a time, followed by vanilla extract.
- Gradually add dry ingredients to the wet mixture and stir until just combined.
- Divide batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Let cakes cool completely before frosting with cream cheese frosting.
