- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup buffalo sauce
- 2 cups cooked rice or quinoa
- 1 cup diced bell peppers
- 1 cup sliced cucumbers
- ½ cup blue cheese crumbles or vegan alternative
- 3 green onions, chopped
- ½ cup sour cream or plant-based yogurt
Instructions
- Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper, then place in the prepared dish and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for five minutes, then shred using two forks.
- In a large bowl, mix shredded chicken with buffalo sauce until evenly coated.
- Assemble by placing rice or quinoa at the bottom of each bowl, topping with buffalo chicken, diced bell peppers, and cucumbers.
- Garnish with blue cheese crumbles, green onions, and a dollop of sour cream or yogurt.
