Instructions
- In a large pot over medium heat, melt the butter and sauté the onions until soft (5-7 minutes).
- Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring to a gentle boil; then reduce heat and simmer for 20 minutes.
- Use an immersion blender to puree the soup until smooth or leave some chunks for texture.
- Return to low heat, stir in the heavy cream and optional agar-agar powder.
- Season with salt and pepper to taste before serving.
