- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 large egg
- 2 tsp vanilla extract
- 8 oz cream cheese (softened)
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, mix the flour, baking soda, and salt.
- In another bowl, cream the softened butter with granulated and brown sugars until light and fluffy. Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet mixture until just combined.
- For the cheesecake filling, beat the cream cheese until smooth, then gently fold in the blueberries.
- Scoop tablespoon-sized cookie dough onto prepared baking sheets. Create an indentation in each ball, fill with cheesecake mixture, and top with more cookie dough.
- Bake for 12-15 minutes or until golden around the edges but still soft in the center. Cool on baking sheets for five minutes before transferring to wire racks.
