- 4 boneless skinless chicken breasts
- 4 tbsp olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tsp dried oregano
- 3 garlic cloves, minced
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cup plain Greek yogurt
- 2 tbsp fresh dill, chopped
- 1/4 cup pitted Kalamata olives, chopped
Instructions
- 1. Marinate chicken: In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 1 hour or overnight.
- 2. Preheat grill or oven: Set to medium-high heat or broil.
- 3. Cook chicken: Grill each side for 6-8 minutes until cooked through or broil until golden brown.
- 4. Assemble bowl: Slice cooked chicken and layer with cucumbers, tomatoes, and red onion in bowls.
- 5. Prepare tzatziki: Combine yogurt, dill, olives in a bowl; season to taste.
- 6. Serve: Top veggie base with sliced chicken and drizzle generously with tzatziki sauce.
