- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, room temperature
- ¾ cup granulated sugar
- 1 cup fresh mango puree (about 2 ripe mangos)
- 2 tbsp lemon juice, freshly squeezed
- 1 tbsp agar-agar powder
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan. Bake for 10 minutes until golden.
- Blend cream cheese, sugar, mango puree, and lemon juice until smooth.
- In a saucepan, combine agar-agar with water according to package instructions and dissolve over medium heat.
- Gradually mix agar-agar into the cream cheese mixture while blending until well combined.
- Pour filling over cooled crust and smooth the top. Chill in the refrigerator for at least 4 hours or overnight before serving.
