  • 1 cup fresh mango puree (about 2 ripe mangos)
  • 2 tbsp lemon juice, freshly squeezed
  • 1 tbsp agar-agar powder

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan. Bake for 10 minutes until golden.
  2. Blend cream cheese, sugar, mango puree, and lemon juice until smooth.
  3. In a saucepan, combine agar-agar with water according to package instructions and dissolve over medium heat.
  4. Gradually mix agar-agar into the cream cheese mixture while blending until well combined.
  5. Pour filling over cooled crust and smooth the top. Chill in the refrigerator for at least 4 hours or overnight before serving.
