- 2 salmon fillets (6 oz each)
- 1 tablespoon olive oil
- 1 cup orzo pasta
- 2 cups low-sodium vegetable broth
- 1 tablespoon freshly squeezed lemon juice
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 2 tablespoons toasted pine nuts
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté minced garlic until fragrant (about 1 minute).
- Add orzo and stir for another minute. Pour in vegetable broth and half of the lemon juice; bring to a simmer.
- Once the orzo absorbs some broth (about 5 minutes), stir in fresh spinach and season with salt and pepper.
- Nestle salmon fillets on top of the orzo mixture, drizzle with olive oil, season, cover, and cook for 6–8 minutes until salmon flakes easily.
- Squeeze remaining lemon juice over the dish, sprinkle with toasted pine nuts, and serve.
