Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour and baking powder until well combined.
- In another bowl, cream together softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture; mix until just combined.
- Gradually stir in the dry ingredients until just incorporated, then fold in chopped pistachios and cream cheese.
- Scoop dough onto prepared baking sheets, spacing them two inches apart, and bake for 12-15 minutes until edges are golden but centers remain soft.
- Allow cookies to cool slightly before serving.
