- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup fresh basil pesto
- 1 cup low-sodium chicken broth
- 8 oz fresh mozzarella cheese, cubed
- 8 oz fusilli or penne pasta
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper.
- Place the seasoned chicken in the slow cooker; pour in the basil pesto and chicken broth. Stir gently to combine.
- Cook on low for 6 hours or high for 3 hours.
- In the last 30 minutes of cooking, add uncooked pasta and cubed mozzarella cheese; stir to combine.
- Once cooked, serve warm, garnished with extra basil if desired.
