Ingredients
- 2 heads of broccoli (tops only)
- 8 slices of cooked turkey bacon (chopped)
- 1 cup diced red onion
- 1 cup shredded cheddar cheese
- 1/2 cup salted roasted sunflower seeds
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 3 tablespoons monk fruit sweetener or erythritol
Instructions
- In a small bowl, whisk together the mayonnaise, apple cider vinegar, and monk fruit sweetener. Set aside.
- In a large mixing bowl, combine chopped broccoli, turkey bacon, diced red onion, shredded cheddar cheese, and sunflower seeds. Mix gently.
- Pour the dressing over the salad ingredients and toss until everything is well coated.
- Refrigerate for at least one hour before serving to allow flavors to meld.
