  • 1 carrot, peeled and cut into sticks
  • 1 zucchini, sliced into rounds
  • 2 garlic cloves, whole or halved
  • 1 tbsp butter (or olive oil)
  • 1 tbsp fresh parsley or dill, chopped
  • Juice of 1 lemon
  • Salt & black pepper to taste

Instructions

  1. In a skillet over medium heat, melt half the butter. Sauté garlic, carrots, and zucchini for 6-8 minutes until tender and caramelized. Season with salt and pepper; set aside.
  2. Season the fish with salt and pepper. In the same skillet, melt remaining butter over medium-high heat and sear the fish for 3-4 minutes per side until golden and flaky. Add lemon juice during the last 30 seconds.
  3. Plate the fish alongside the sautéed vegetables. Spoon any pan sauce over the top and garnish with fresh herbs.
  4. Serve hot alongside rice or potatoes or enjoy on its own.
