  • 2 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. In a mixing bowl, whisk together flour, powdered sugar, and salt. Cut in the chilled butter until crumbly.
  2. Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat oven to 350°F (175°C). Roll out dough to about 1/8-inch thickness and cut into circles.
  4. Bake cookies on parchment-lined baking sheets for 8-10 minutes until lightly golden. Let cool completely.
  5. In a saucepan, whisk together lemon juice, granulated sugar, egg yolk, cornstarch, and lemon zest. Cook over medium heat until thickened; cool completely.
  6. Beat egg whites until foamy; add cream of tartar and continue beating until soft peaks form. Gradually add sugar until stiff peaks form.
  7. Spoon lemon filling onto cooled cookies and top with meringue.
  8. Broil for 1-2 minutes until meringue is lightly golden.
