Instructions

  1. Prepare the dough by mixing warm water, sugar, and yeast in a bowl and letting it froth for about 5 minutes. In another bowl, combine flour and salt, then mix in the yeast mixture and olive oil until a dough forms.
  2. Knead the dough on a floured surface for about 8-10 minutes until smooth. Place in an oiled bowl, cover with a towel, and let rise in a warm place for 1 to 1.5 hours until doubled.
  3. While the dough rises, mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a bowl until well combined.
  4. Preheat the oven to 475°F (245°C) with your pizza stone or baking sheet inside.
  5. Roll out the risen dough into a thin round shape on a floured surface.
  6. Transfer the rolled dough onto parchment paper or pizza peel if using stone. Spread the cheese mixture evenly over it and sprinkle fresh thyme on top.
  7. Bake on the preheated stone or baking sheet for 10-12 minutes until crust is golden brown and cheese bubbles.
  8. Drizzle with olive oil and honey before serving.
