- 2 cups all-purpose flour

- 1 tablespoon olive oil

- 1 teaspoon active dry yeast
- 1 tablespoon sugar
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1/4 cup ricotta cheese
- 1/2 cup mozzarella cheese
- 1/4 cup Parmesan cheese
- Fresh thyme for garnish
Instructions
- Prepare the dough by mixing warm water, sugar, and yeast in a bowl and letting it froth for about 5 minutes. In another bowl, combine flour and salt, then mix in the yeast mixture and olive oil until a dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth. Place in an oiled bowl, cover with a towel, and let rise in a warm place for 1 to 1.5 hours until doubled.
- While the dough rises, mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a bowl until well combined.
- Preheat the oven to 475°F (245°C) with your pizza stone or baking sheet inside.
- Roll out the risen dough into a thin round shape on a floured surface.
- Transfer the rolled dough onto parchment paper or pizza peel if using stone. Spread the cheese mixture evenly over it and sprinkle fresh thyme on top.
- Bake on the preheated stone or baking sheet for 10-12 minutes until crust is golden brown and cheese bubbles.
- Drizzle with olive oil and honey before serving.
