  • 1 Tablespoon extra virgin olive oil
  • 1 green bell pepper (diced)
  • 1 red bell pepper (diced)
  • 1 yellow onion (diced)
  • 8 oz mushrooms (sliced)
  • 2 cloves garlic (pressed or minced)
  • 1 Tablespoon balsamic vinegar
  • 6 oz shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with foil and spray with nonstick spray.
  2. Heat a large skillet over medium-high heat and add nonstick spray. Sear the butterflied sausages cut side down until golden brown (about 5 minutes). Flip and sear for an additional minute before transferring to the baking sheet.
  3. In the same skillet, add olive oil and sauté diced bell peppers and onion for about 5 minutes until they soften. Add sliced mushrooms and cook until tender. Stir in minced garlic and balsamic vinegar.
  4. Spoon the vegetable mixture over the sausages on the baking sheet, sprinkle with mozzarella cheese, and bake for 10-12 minutes or until cheese is melted.
