Ingredients
- 4 sweet or hot Italian sausage links (uncooked, butterflied)
- 1 Tablespoon extra virgin olive oil
- 1 green bell pepper (diced)
- 1 red bell pepper (diced)
- 1 yellow onion (diced)
- 8 oz mushrooms (sliced)
- 2 cloves garlic (pressed or minced)
- 1 Tablespoon balsamic vinegar
- 6 oz shredded mozzarella cheese
Instructions
- Preheat your oven to 350°F. Line a baking sheet with foil and spray with nonstick spray.
- Heat a large skillet over medium-high heat and add nonstick spray. Sear the butterflied sausages cut side down until golden brown (about 5 minutes). Flip and sear for an additional minute before transferring to the baking sheet.
- In the same skillet, add olive oil and sauté diced bell peppers and onion for about 5 minutes until they soften. Add sliced mushrooms and cook until tender. Stir in minced garlic and balsamic vinegar.
- Spoon the vegetable mixture over the sausages on the baking sheet, sprinkle with mozzarella cheese, and bake for 10-12 minutes or until cheese is melted.
