Ingredients
- 1 tsp olive oil
- 1 medium onion (thinly sliced)
- 5 boneless, skinless chicken thighs
- ⅓ cup lower carb BBQ sauce
- ½ cup shredded cheese
Instructions
- Heat olive oil in a skillet over medium heat. Sauté sliced onions for 3-4 minutes until softened.
- Season chicken thighs with salt and pepper, add to the skillet with onions, cover, and cook on medium/low heat for about 10 minutes until cooked through (internal temp reaches 165°F).
- Shred the chicken in the skillet using two forks, stir in BBQ sauce, top with cheese, cover for 1-2 minutes until melted.
