Instructions
- Heat olive oil in a skillet over medium heat. Add the sliced onion and sauté for 3-4 minutes until softened.
- Season chicken thighs with salt and pepper, add them to the skillet with onions, cover, and cook on medium/low for 10 minutes until the internal temperature reaches 165°F.
- Shred the cooked chicken in the skillet using two forks. Stir in the BBQ sauce until well coated, then top with cheese, covering for an additional 1-2 minutes until melted.
