- 4 lb boneless beef chuck roast
- 12 oz whole pepperoncini peppers and juice

Instructions
- Prepare your slow cooker by adding beef stock, pepperoncini peppers (with juice), sliced onion, chopped garlic, onion powder, bay leaf, and Italian seasonings. Stir to combine.
- Cut the beef into large chunks, season with salt and pepper, then sear in a hot skillet with olive oil until browned on all sides.
- Transfer the seared beef to the slow cooker and reduce heat to low; cook for 6 hours or until tender.
- After cooking, remove the beef and shred it using two forks.
- Serve with reduced cooking liquid as a dipping sauce alongside low-carb vegetables like cauliflower rice or zucchini noodles.
