  • 2 sea bass fillets (6 oz each)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 4 cups fresh spinach
  • 1 cup full-fat coconut milk
  • 1 tsp agar-agar powder

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray.
  2. In a bowl, mix olive oil, minced garlic, lemon juice, salt, and pepper. Brush half of this mixture over the sea bass.
  3. Place the sea bass in the baking dish and bake for 15-20 minutes until flaky.

  5. Stir in coconut milk and agar-agar powder; cook until thickened.
  6. Serve the sea bass with creamed spinach and drizzle remaining lemon-garlic mixture on top.
