- 2 sea bass fillets (6 oz each)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- Juice of 1 lemon
- Salt and pepper to taste
- 4 cups fresh spinach
- 1 cup full-fat coconut milk
- 1 tsp agar-agar powder
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray.
- In a bowl, mix olive oil, minced garlic, lemon juice, salt, and pepper. Brush half of this mixture over the sea bass.
- Place the sea bass in the baking dish and bake for 15-20 minutes until flaky.
- Meanwhile, in a skillet, heat olive oil over medium heat and sauté spinach until wilted.
- Stir in coconut milk and agar-agar powder; cook until thickened.
- Serve the sea bass with creamed spinach and drizzle remaining lemon-garlic mixture on top.
