- 375 g cooking apples (e.g., Bramleys)
- 375 g eating apples (e.g., russets)
- 60 g caster sugar
- Grated rind of 1 lemon
- 45 g plain flour (or cornflour)
- 500 ml whole milk
- 3 large egg yolks
- 1½ teaspoons vanilla bean paste or extract
- 60 g demerara sugar
- ½ teaspoon ground cinnamon
- 45 g butter
Instructions
- Preheat your oven to 180°C (350°F).
- Peel, core, and slice both types of apples. In a saucepan, melt butter and cook apples with caster sugar and lemon rind until softened, about 5-7 minutes.
- For the custard, whisk flour and caster sugar in a bowl. Gradually add milk while whisking to prevent lumps. Cook in a saucepan over medium heat until thickened, then remove from heat and stir in egg yolks and vanilla.
- Layer half of the custard in a baking dish, top with cooked apples, pour remaining custard over apples, and sprinkle with demerara sugar mixed with cinnamon.
- Bake for about 20 minutes or until golden brown on top.
