  • 375 g eating apples (e.g., russets)
  • 60 g caster sugar
  • Grated rind of 1 lemon
  • 45 g plain flour (or cornflour)
  • 500 ml whole milk
  • 3 large egg yolks
  • 1½ teaspoons vanilla bean paste or extract
  • 60 g demerara sugar
  • ½ teaspoon ground cinnamon
  • 45 g butter

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Peel, core, and slice both types of apples. In a saucepan, melt butter and cook apples with caster sugar and lemon rind until softened, about 5-7 minutes.
  3. For the custard, whisk flour and caster sugar in a bowl. Gradually add milk while whisking to prevent lumps. Cook in a saucepan over medium heat until thickened, then remove from heat and stir in egg yolks and vanilla.
  4. Layer half of the custard in a baking dish, top with cooked apples, pour remaining custard over apples, and sprinkle with demerara sugar mixed with cinnamon.
  5. Bake for about 20 minutes or until golden brown on top.
