  • ½ cup canola oil
  • 1¼ cups canned pumpkin puree
  • ¼ cup milk
  • 1¼ teaspoons maple extract
  • ½ cup finely chopped pecan or walnuts
  • 3 tablespoons brown sugar (packed)
  • ¼ cup all-purpose flour
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix chopped pecans or walnuts with brown sugar, flour, cinnamon, and melted butter for the topping.
  3. In another bowl, whisk together the flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
  4. In a large bowl, beat eggs and sugar together. Add oil, pumpkin puree, milk, and maple extract; mix until smooth.
  5. Gradually combine dry ingredients with the wet mixture until just combined.
  6. Pour half of the batter into a greased loaf pan; sprinkle half of the topping on top. Add remaining batter and top with remaining crumble.
  7. Bake for about 50 minutes or until a toothpick comes out clean. Let cool before glazing.
