Ingredients
- 1 cup basmati rice
- 2 tablespoons extra virgin olive oil
- 1/2 cup yellow onion, diced
- 1/2 cup celery, diced
- 1 1/2 cups vegetable stock
- 1/4 cup fresh dill, chopped
- 1 tablespoon fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon sea salt
Instructions
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and celery along with sea salt. Sauté until tender (about 4-5 minutes).
- Stir in the basmati rice, tossing to coat it in the oil and vegetables. Add vegetable stock and lemon juice; bring to a boil.
- Reduce heat to low, cover tightly, and let simmer for 13-15 minutes or until all liquid is absorbed. Remove from heat and let sit covered for an additional 5-6 minutes.
- Fluff the rice with a fork, then mix in chopped dill and lemon zest before serving.
