  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp fresh dill (chopped)
  • 3 tbsp olive oil (for vinaigrette)
  • 2 tbsp fresh lemon juice (for vinaigrette)
  • 1 tsp honey (omit for Whole30)
  • 1 garlic clove (minced, for vinaigrette)
  • ½ tsp dried oregano (for vinaigrette)
  • salt & pepper (to taste, for vinaigrette)

Instructions

  1. Marinate the steak by mixing olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the steak and refrigerate for at least 30 minutes.
  2. Prepare the tzatziki sauce by combining Greek yogurt (or coconut yogurt), grated cucumber, lemon juice, minced garlic, and dill in a separate bowl. Chill until ready to use.
  3. Heat a skillet over medium-high heat and sear the marinated steak for 4–5 minutes per side until cooked to your liking. Let rest before slicing.
