Ingredients
- 3 tablespoons olive oil
- 1 onion (diced)
- 4 garlic cloves (minced)
- 2 cups basmati rice (or other long, medium, or short-grain rice)
- 1 cup water
- 2 cups chicken or vegetable broth
- 1 teaspoon turmeric
- Salt to taste
- 3 tablespoons parsley (chopped)
- Zest of 1 lemon
- 3–4 tablespoons lemon juice
Instructions
- Heat olive oil in a large saucepan over medium heat. Sauté diced onion for 2 minutes until translucent, then add minced garlic and cook for an additional 2 minutes.
- Stir in turmeric and salt, mixing well to coat the aromatics.
- Add the rice and stir until most grains are translucent.
- Pour in the broth and water, cover the saucepan, and bring to a simmer. Reduce heat to low.
- Simmer for about 12 minutes or until all liquid is absorbed.
- Remove from heat and let sit covered for an additional 10 minutes.
- Fluff with a fork before stirring in lemon zest, lemon juice, and chopped parsley.
