  • Zest of 1 lemon
  • 34 tablespoons lemon juice

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Sauté diced onion for 2 minutes until translucent, then add minced garlic and cook for an additional 2 minutes.
  2. Stir in turmeric and salt, mixing well to coat the aromatics.
  3. Add the rice and stir until most grains are translucent.
  4. Pour in the broth and water, cover the saucepan, and bring to a simmer. Reduce heat to low.
  5. Simmer for about 12 minutes or until all liquid is absorbed.
  6. Remove from heat and let sit covered for an additional 10 minutes.
  7. Fluff with a fork before stirring in lemon zest, lemon juice, and chopped parsley.
