- 2 cups chocolate wafer cookies, crushed
- 1/2 cup unsalted butter, melted
- 2 cups heavy whipping cream
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp peppermint extract
- 1 cup mini chocolate chips
- Whipped topping
- Chocolate shavings
- Additional chocolate chips
Instructions
- Prepare the chocolate base by mixing crushed cookies with melted butter. Press firmly into a 9×13-inch dish and refrigerate.
- For the mint filling, blend softened cream cheese with powdered sugar and peppermint extract until smooth. Gently fold in whipped cream and mini chocolate chips.
- Layer half of the mint filling over the chilled crust, followed by additional layers as desired (ganache optional). Finish with the remaining mint filling.
- Spread whipped topping over the top layer and garnish with chocolate shavings.
- Chill for at least 4 hours before slicing and serving.
